Classic Shun Knife Review

Hey everybody, Steve Shue here for another addition of the Shun Knife Review. Okay, today we're going to be talking about the most popular of the Shun Knives which is the Classic Shun Knife. Yeah, I know... great name - the Classic Shun Knife... but really, it is a Classic and is therefore the most classic of the Shun Knives. Now, this knife is aimed directly at the enthusiast home chef, like myself. Again, their the most popular of the Shun Knives and they outsell all other Shun Knife lines combined. Chances are if you know someone that has a Shun or have friends who own a Shun Knife, odds are they own a Shun Classic. This knife uses a Japanese steel called VG-10, which is much harder and sharper than most European steels. I think many would agree with me when I say the sharpness of a Shun Knife is unsurmountable. I mean these things are frickin' sharp. *laughs* But, again, most people would agree with me that coupled with the extreme sharpness, this knife has a lightweight feel and traditional western handle that makes for an excellent combination. The attractive Damascus pattern on the blade has a unique look like a wood grain of some sort. It's pretty cool. You might be able to see that in this picture. They also have a D Shaped handle... or as some would say - a teardrop handle. You can see from this picture the uniqueness of the handle. An excellent starter piece if new to Shun, this 6-inch Chef's knife will be a kitchen staple that's hard to put down. Designed for chopping, dicing and mincing, the smaller-handed cook will find it's the perfect balance and size while still delivering precision results.

Shun DM0723 Classic 6-Inch Stainless-Steel Chef's Knife Specifications

Made from VG-10 stainless steel, Shun knives are specially constructed to be harder, less brittle, but also more flexible than traditional steel formulations. The VG-10 core is clad with 16 full layers of SUS410 high-carbon stainless steel on each side, for a total of 33 layers. These layers not only protect the VG-10, they create an exquisitely detailed surface reminiscent of Damascus or pattern-forged steel, the kind once used for Samurai swords. As a result, the knives are simply stunning to look at--much like antique Damascus knives but without their tendency to rust.

The 6-inch blade of this chef's knife works great for slicing, chopping, dicing, and more. Like many Asian-style cutlery, the knife's handle is especially suited to smaller users. In contrast to the traditional round profile, however, Shun's are D-shaped to prevent the knife from twisting in the hand, which provides extra stability and a firm grip. The handle is made from ebony-colored PakkaWood, a fused blend of hardwood veneers imbued with waterproof resin that combines the warmth and traditional look and feel of wood with the strength and durability of plastic. The offset stainless-steel bolster is designed for ergonomic comfort and maximum safety, while a stainless-steel end cap provides the finishing touch. Hand washing the knife is recommended.
