Every knife is handcrafted by skilled artisans and the production process requires over 100 steps from beginning to end. Each blade has an inner core of VG-10 “super steel” clad with 16 layers of stainless Damascus for an exceptionally sharp and smooth result. The resulting blade pattern is called suminigashi, or “ink pattern,” after a traditional Japanese paper-decorating technique. Patterned layers also offer durability while resisting stains.
